Knives
Roselli makes handmade knives for outdoor, hunting and kitchen use. Its range includes compact Nordic designs for controlled field and carving work, as well as kitchen knives inspired by Japanese forms. Depending on the model, blades use forged carbon steel or the brand’s harder Ultra High Carbon (UHC) steel, paired with natural curly birch handles.
The Carpenter knife suits wood carving, bushcraft and small-game tasks, while the Hunting knife is designed for field dressing and game processing. In the kitchen range, the Small Chef, Santoku and Allround knives offer different blade shapes for chopping, slicing and more precise cutting.

Outdoor knives
The Carpenter knife is the compact choice for detailed outdoor work. Its 85 mm blade is designed for control in wood carving, bushcraft and small-game processing. The Hunting knife has a longer, 100 mm blade and is intended for skinning and controlled cuts when processing larger game. Both models use curly birch handles and carbon-steel blades, but their different sizes suit different tasks: the Carpenter knife favors precision, while the Hunting knife provides more blade length for field work.
Kitchen knives
Roselli’s kitchen range includes the Small Chef, Santoku and Allround knives. The Small Chef has a 135 mm blade for general chopping and slicing. The 160 mm Santoku offers a longer cutting edge for versatile kitchen preparation, while the Allround has a narrower 120 mm blade suited to precise cutting and delicate slices. These models are available in carbon steel or UHC steel depending on the knife. UHC is exceptionally hard and holds a sharp edge well, but its hardness makes the edge less tolerant of twisting, impacts or contact with very hard materials. The standard carbon-steel models are easier to sharpen in the field. Check the specific model for its steel and configuration.
Materials and making
Roselli handcrafts its knives in Harmoinen, Finland. Curly birch handles are treated with linseed oil; the grain and color vary naturally from knife to knife. Selected models include a vegetable-tanned leather sheath. Roselli also offers a free sharpening service for its knives. Carbon-steel blades need to be cleaned and dried after use, and should not be put in a dishwasher.
