Chef's knives
The chef's knife is the hearth of every kitchen and the most commonly used knife. With a versatile chef's knife, you can chop meat, fish, and vegetables, and remove membranes from meat. Chef's knives typically have fairly long blades (15-40 cm), which helps achieve clean cuts. The blade length should naturally be chosen according to its intended use. For more precise work, a shorter blade is better, but when dealing with larger ingredients, the blade also needs to have more reach.
