Roselli Small Chef with leather sheath 菜刀

A fantastic knife is useful all around the kitchen. A very good purchase.

The knife is a good starting point for someone who wants to try a simple and compact santoku-type kitchen knife with a carbon-blade. However, I would stress that the factory grind of the 3 mm thick blade is low scandinavian-convex. This means that the knife tends to split the food more than to cut it (good in chopping, but poor at slicing). For significant increase of the functionality of the knife it worth to make a high convex (or saber) grind of the blade. Moreover, the used steel (W75 at the Roselli heat treatment) have enough toughness to support thinner edges. Actually, in use the edge showed up decent toughness (no chips even at high convex grind) with excellent retention and easiness of sharpening. The handle is comfortable and could be used by left-handed persons as well. Also, the knife goes with a simple, but handy knife rack. As a conclusion, I would recommend the this product, but keep in mind that the factory grind (low scandinavian-convex at 3 mm thick blade on a kitchen knife) could be not by the taste of everyone.

Handlich, gut zu führen und sehr schön gearbeitet. Insgesamt ein wertiger Eindruck. Einen Stern ziehe ich allerdings ab, da mir persönlich die Klingenbeschichtung nicht so gut gefällt. Diese ist gut gemacht, alles Geschmackssache...
